100% Espadn (Agave Angustifolia) | Oaxaca, Mexico | Sacrificio Method | 47% ABV (94 Proof) | 750 mL
Bozal Guas De Calabaza is a rare vegetarian interpretation of the traditional Sacrificio mezcal from Oaxaca. Produced in Ro de Ejutla using Espadn agave, the pias are roasted in earthen pit ovens, crushed by a stone tahona, and double-distilled in copper pot stills. During the second distillation, instead of meat as in traditional Sacrificio mezcals, a basket of pumpkin stems (guas de calabaza), along with plantains, oranges, pineapple, pumpkin seeds, and the native herb chepiche, is suspended in the still. This unique process imparts layered vegetal, herbal, and fruity notes to the mezcal, resulting in an expressive small-batch release rooted in ancestral celebration.
Nose: Citrus peel, orange blossom, mint, cucumber, and fresh herbs
Palate: Bright chepiche, roasted agave, vegetal pumpkin stem notes, balanced by plantain and spice
Finish: Long and earthy with mineral tones, subtle pepper, and lingering smoke
Crafted using the ancestral Sacrificio method, but entirely vegetarian
Uses pumpkin stems, fruits, seeds, and herbs in the distillation for unique flavor layers
Made from 100% Espadn agave grown in Oaxaca
Bottled at 47% ABV (94 Proof) to capture its bold, smoky, and vegetal complexity
Seasonal, small-batch release designed for community and festivity
Best enjoyed neat to experience the evolving layers of herbal, fruity, and smoky character. It pairs beautifully with grilled vegetables, roasted squash, or dishes with earthy spice. For adventurous cocktails, it can substitute for mezcal in a Margarita or be highlighted in a spirit-forward mezcal Negroni.
