Peak & Trough cider is made from the highest and lowest wild apples in Cornwall. There is a population of seedlings at around 700′ and another at about 8′ above mean high water. It’s tart, mineral and salty, reflective of the marginal conditions in which these apples not only survive, but thrive – they are irredeemably biennial however.
