Crispin Cainhas been working in Wine and Spirits in Northern California since 1983, including serving as assistant distiller to Brandy-master Hebert Germain-Robin. He foundedGreenway Distillersin 2005 andTamar Distillery/Mendocino Spiritsin 2008. From their small craft shop in Redwood Valley they produce several bands ofpremium Spirits, including Low Gap Whiskey, Russell Henry Gins, Fluid Dynamics Cocktails, and DSP 162 Vodkas along with Absinth and Liqueurs.
Russell Henry Dark Gin is the brainchild of Crispin Cain, Master Distiller at Tamar Distilleries. He takes the London Dry Gin and ages it innew Bourbon and new Cognac barrels for an year.The London Dry is well-balanced and light, with strong pine notes and delicate flavors. The resulting Dark Gin though is much more exotic, elegant and aromatic. Its perfumed on the nose, with sweet, peppery and wood flavors. Its a complex drink, and one well worth seeking out.
