Ichiro Akuto’s Chichibu distillery, one of Japan’s most coveted and smallest distilleries, holds the distinction of being the country’s youngest. Founded in 2008, it was the first new distillery to be established in Japan in several decades. Despite being the third generation of his family to be involved in brewing, Ichiro approaches his distillery with an experimental edge while still paying tribute to Scotland’s distilling customs.
