A cider from the San Juan Islands of Washington State. The ethos of their company is rooted in giving a voice to the terroir of their region through native fruits and innovative ferments. They are inspired to create wines with clarity and precision for everyday drinking – let’s celebrate the mundane with something special! This cider contained Honeycrisp and Spitzenberg apples from two different organically farmed vineyards. This wine was their first that had a long, self-determined fermentation that lasted over 4 months rather than other projects with fermentations that only lasted a few weeks. The result is a complex, developed, generous yet airy palette that has a clean and finite finish. Chenin-like, filled with golden fruits and savory notes of warm brioche and a consistent, foamy bubble.
