Vineyard notes:
Kimmeridgian. Medium-depth, clayey, brown soil with small pebbles improving soil drainage.
Southwest exposure, bright, very airy and moderated by the Serein River. Rather gentle slope.
Years of planting: 1950 / 1980
Winemaking notes:
No added yeasts, long fermentation using indigenous yeasts, in temperature-controlled vats.
Spontaneous malolactic fermentation.
Aged for 18 to 20 months. In stainless steel vats only, with minimal handling. Long stabilization in moderate cold.
Bonding with bentonite if necessary.
A single light filtration is carried out at bottling.
Tasting notes:
Serve between 12C and 14C. Air before serving.
