Bozal Guas De Calabaza is a rare vegetarian interpretation of the traditional Sacrificio mezcal from Oaxaca. Produced in Ro de Ejutla using Espadn agave, the pias are roasted in earthen pit ovens, crushed by a stone tahona, and double-distilled in copper pot stills. During the second distillation, instead of meat as in traditional Sacrificio mezcals, a basket of pumpkin stems (guas de calabaza), along with plantains, oranges, pineapple, pumpkin seeds, and the native herb chepiche, is suspended in the still. This unique process imparts layered vegetal, herbal, and fruity notes to the mezcal, resulting in an expressive small-batch release rooted in ancestral celebration.
