Commercial Description:
This is anything but your “typical” Espadn. 4th generation mezcalero Alberto Martinez cultivates and harvests his own Espadn in rocky soil at altitudes as high as 7,5000 feet above sea level. He patiently waits until they reach maturity, anywhere between 7 and 10 years, before they finally show signs of sprouting their “quiote.” Nowadays, most mezcaleros would consider this agave fully mature, but Alberto isn’t most mezcaleros. He cuts the stock off at its base, making it a “Capn,” and waits another six months to a year while the sugars concentrate in the pia, which will later result in a significantly higher yield and a deeper, more complex tasting experience.
This Espadin Capn is processed with an ancestral/traditional method: roasted underground in a conical oven for at least four days with Encino oak and leaves from local trees, fermented in stone with ground tepehuaje bark and spring water, and double-distilled over an open-flame in clay pot stills
