The current propietor Laurent Cazotte hand picks every single piece of fruit at maximum ripeness. He then goes through a multi-stage process that involves fermenting the fruit, distilling it, macerating it in grape eau de vie made from estate grown grapes that are distilled and then finally marrying all three components together. The result is staggering.
