The Plnitude (originally Oenothque) concept has been years in development at Dom Prignon. After studying the natural course of aging that vintage champagne seems to undertake, the winemaking team found that, rather than improving steadily and linearly (as is the case with many wines), it develops and matures through three defined stages in its life.

The first release (P1) comes approximately 8 years after the harvest and is the style that most consumers are familiar with. The second stage (P2) takes roughly 15 years, during which time the cuve takes a profound leap to a new quality level where it will plateau for many years in terms of improvement. Finally, the third plnitude (P3) will see the champagne aging another 20-30 years until it reaches its ultimate peak.

Dom Prignon P2 Ros 2000 presents itself on the nose with a fascinating, Janus-like duality, showing both freshness and warmth.

Alluring aromas of black cherries, dried figs and roses mingle with deeper notes of nutmeg and cocoa powder.

A final touch of toast, smoke and ash adds a layer of complexity that enriches the bouquet.

On tasting, the wine has a remarkable consistency and integrated balance that dominates the initial impression. Its texture on the palate is supple, offering a round and full-bodied sensation.

The finish surprises with an intensification of flavors that then softens, revealing a subtle balance between sweetness and acidity, accompanied by spicy notes and dried citrus.
