Rafael Palacios Louro Do Bolo is a vibrant and textural white from Valdeorras, Galicia, Spain, crafted from 100% Godello sourced from biodynamically and organically farmed terraces in O Bolo. The 25-year-old vines grow at over 600 meters on sandy granitic soils with clay deposits, producing grapes of exceptional aromatic intensity and minerality. The wine is gently pressed and fermented in 35-hectolitre French oak foudres, then aged on its lees for four months, resulting in a lemon-coloured wine with golden highlights, expressive aromas of lemon, ripe stone fruit, and fennel, a saline edge, and a mineral, textural finish.
Since founding his winery in 2004, Rafael Palacios has become one of Spains leading white wine producers, renowned for his low-intervention approach and dedication to preserving traditional terraces and old vines in Valdeorras.
Grapes are harvested from steep, terraced vineyards and pressed gently. Fermentation occurs in French oak foudres, followed by four months of lees aging before bottling, with minimal intervention to showcase purity of fruit and terroir expression.
Lemon with golden highlights, offering intense aromas of lemon, ripe stone fruit, and fennel, with a saline edge. The palate is texturally complex, fruit-forward, and finishes with pronounced minerality.
Pairs well with seafood, grilled fish, roasted vegetables, or creamy pasta dishes.
