Taaibosch Crescendo 2021 is produced from a blend of 49% Cabernet Franc, 36% Merlot and 15% Cabernet Sauvignon. All grapes are handpicked and once in the cellar, the grapes are gently transferred by means of gravity to both stainless steel and cement vessels. A period of cold soaking follows. Extended maceration is undertaken at the conclusion of fermentation, which adds a soft texture, increased colour intensity and complexity to the wine. The wine is matured for 13 months in 225-litre French oak barrels (of which 30% is new). Thereafter the wine is blended and transferred to foudre and cement vessels for a further 12 months. Bottled at 13.5%. (Bottle size 750ml).
Nose: Lovely inviting red fruit flavours, a combination of red currants, raspberry and plums. A subtle whiff of sweet spice.
Palate: On entry notes of red currants, blue berries and mulberries. Mid-palate is more savoury with hints of tomato powder and a creamy texture.
Finish: A finely grained powdery tannin structure with persistent notes of plums and cedar wood.
