We set out to make a gin that was definitely a gin, but far more interesting than the traditional London dry style. So we ditched the harsh (and less expensive) juniper in favor of a soft, nuanced Tuscan-grown variety. We topped it with the subtle warmth of cassia and cardamom. And we balanced and brightened it with grapefruit peel. The Walter Collective Gin is well-structured and complex a delicious leap forward for gin lovers and bartenders everywhere.
