Not far away from Elliott Bay, a bold new distillery was established in 2010 by two childhood friends: Master DistillerMatt Hoffmanand CEOEmerson Lamb. They called itWestland Distilleryand their Spirits embody the nature of the Pacific Northwest. Matt,asmany other Whiskey-makers, went to Scotland and absolutely fell in love with the Single Malt. The distillery’s twocopper pot stillscreate the core American Single Malt Whiskey, which is made using malted barley, at a single distillery, just like in Scotland – except American laws are laxer and allow moreexperimentation.
Westland American Oak Single Malt is a wonderful concoction with added specialty malts fermented with a Belgian brewer’s yeast for six days, crafted from a version of Westland house malt style, and made from immensely smoky peat. The Spirit opens a pleasant peat landscape with the malt-forward profile that rounds of the smoke. Coming from fresh American oak casks and barrels that used to hold Bourbon adds a lovely new angle to the world of peated Whiskeys.
